Ingredients
- 2 tbsp olive oil
- 120 g onion, diced
- 3 clove garlic, minced
- 150 g barley
- 900 ml vegetable broth
- 400 g navy beans
- 200 g kale, roughly chopped
- 1 piece lemon, juiced
- 30 g parmesan, grated
- 1 tsp salt
- 0.5 tsp black pepper
- 0.3 tsp cayenne pepper

Instructions
- 1 Heat olive oil in a large pot over medium heat. Sauté onion until softened, about 5 minutes. Add garlic and red pepper flakes, cook 30 seconds.
- 2 Add barley and stir to coat in oil. Pour in vegetable broth, bring to a boil, then reduce to a simmer. Cover and cook 25 minutes until barley is tender.
- 3 Stir in drained white beans and kale. Cook uncovered 5 minutes until kale wilts and beans are warmed through.
- 4 Remove from heat. Stir in lemon juice and half the parmesan. Season with salt and pepper. Serve topped with remaining parmesan.
